Caramel Macchiato Banana Bread Recipe


Ingredients


  • 1 lb Cake flour
  • 1 tsp baking powder
  • ¾ lb light brown sugar
  • 2 medium eggs
  • Pinch of salt
  • Pinch of cinnamon
  • 2-3 overripe bananas, mashed
  • ½ cup chopped nuts
  • ¼ cup milk
  • ¼ cup oil
  • 1-2 shots espresso
  • 1 Tbsp caramel syrup

Instructions


  • Set the oven to 350 degrees F 
  • In a large mixing bowl, sift together the flour, baking powder, salt, and cinnamon.
  • Line and grease an 8x4” loaf tin.
  • In a separate, large mixing bowl, mash the bananas with a fork until they are almost smooth.
  • Add the oil, milk, eggs, sugar, nuts, coffee, and caramel (or caramel-flavored espresso) to the mashed bananas and beat thoroughly until the mixture is smooth.
  • Fold in the dry ingredients ⅓ at a time, making sure not to knock out the air.
  • Pour the batter into your bread tin and bake in the hot oven and bake for 20-25 minutes.
  • The bread is ready once a knife comes out clean, without any batter sticking to the blade.
  • Allow the loaf time to cool in the tin before turning it out onto a wire rack.
